Commercial Kitchen Canopy and Exhaust Hood Specialists in Melbourne

KS Steel Engineering has been operating for 13 years from Epping in Melbourne's north. We fabricate commercial kitchen canopies, also known as exhaust canopies or exhaust hoods, in our own workshop and install them for restaurants, cafes, takeaways, hotels and food businesses across Melbourne.

A commercial kitchen canopy is the first part of the exhaust system. It sits over the cooking line, captures heat, steam and grease, and passes them to the ductwork and fan. If the canopy is the wrong size or poorly detailed, the rest of the system cannot make up for it, so we treat the canopy, ducting and fan as one job.

Every canopy is made to suit the kitchen it is going into: the cooking equipment underneath, the ceiling height, the wall construction and where the duct can run. We do not sell a fixed catalogue; we measure, make and fit.

  • Custom-sized exhaust canopies for cooking lines, grills, fryers, woks, pizza ovens and dishwashers
  • Stainless steel construction with grease filters
  • Exhaust ductwork and rooftop fans supplied and installed
  • Fire-rated stainless wall systems where the layout calls for them
  • Coordination with benches, equipment and the wider fit-out

Who We Make Canopies For

Most of our work is for businesses fitting out or upgrading a commercial kitchen. The requirements differ from site to site, which is why we scope each canopy individually.

  • Restaurants and cafes opening or refitting a kitchen
  • Takeaways, bakeries and food manufacturers with heavy cooking loads
  • Hotels, pubs and clubs with larger or multiple cooking lines
  • Builders, shopfitters and kitchen designers who need a canopy subcontractor
  • Owners replacing an old, damaged or undersized canopy

From Measure to Installation

We keep the process simple so you know what happens next. You send us the kitchen layout or equipment list and a few site photos. We confirm measurements, scope the canopy, ducting and fan, and give you a quote.

Once the scope is agreed, the canopy is fabricated at our Epping workshop. Our team then delivers and installs the canopy and connects the ductwork and fan, so there is no handover between a canopy maker and a separate duct contractor.

Because we make the canopy ourselves, changes to size, filter layout or duct connection points can be handled at the fabrication stage rather than on site.

Exhaust Ductwork and Fans for Melbourne Kitchens

A canopy is only as effective as the exhaust system behind it. Alongside the hood we make and install the ductwork, fan boxes and rooftop fans that carry kitchen exhaust from the canopy to the roof discharge.

Rooftop and plant-room runs vary a lot between buildings. Having the same team size the canopy and plan the duct route means fewer surprises when the system is installed.

Standards and Compliance

Commercial kitchen ventilation in Australia is governed by AS 1668.2, and the fire performance of surrounding construction is covered by other requirements such as AS 1530. What applies to your kitchen depends on the building, the cooking equipment and your local authority.

We fabricate to the design and approvals for your project and can discuss clearances, materials and wall protection with your builder or designer. Our compliance page explains how we approach this.
